Ingredients

  • 200 g dried noodles (e.g., ramen, soba, or rice noodles)
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional, for spice)
  • 1 tbsp honey
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 100 g snap peas, trimmed
  • 2 scallions, sliced
  • 1 tbsp toasted sesame seeds
  • 2 tbsp chopped peanuts (optional)
  • 2 tbsp fresh cilantro leaves (optional, for garnish)

Directions

Step 1

Cook the noodles according to the package directions. Drain, rinse under cold water to prevent sticking, and set aside.

Step 2

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sriracha (if using), and honey to make the sauce. Set aside.

Step 3

Heat sesame oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger, and sauté for 30 seconds until fragrant.

Step 4

Add the julienned carrot, red bell pepper, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are slightly softened but still crisp.

Step 5

Add the cooked noodles to the skillet, and pour the sauce over the top. Toss everything together until the noodles are evenly coated and heated through, about 2 minutes.

Step 6

Remove from heat and garnish with sliced scallions, toasted sesame seeds, chopped peanuts (if using), and fresh cilantro leaves.

Step 7

Serve immediately and enjoy your Yum Yum Noodles!
