  • 4 cups Vegetable oil, for frying
  • 0.5 cup Mayonnaise
  • 1 tablespoon Chipotle in adobo sauce, minced
  • 1 tablespoon Lime juice
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Peel the yucca root and cut it into 4-inch sticks. Ensure even thickness for uniform cooking.

In a large pot, bring 8 cups of water to a boil and add 1 tablespoon of salt.

Add the yucca sticks and simmer for 10-12 minutes, or until they are fork-tender but not falling apart.
