Ingredients

  • 2 cups Cassava (yucca) flour
  • 1 cup Tapioca starch
  • 4 tablespoons Unsalted butter
  • 1 cup Whole milk
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Grated Parmesan cheese
  • 2 teaspoons Baking powder

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

In a medium saucepan, combine the butter, milk, sugar, and salt. Heat the mixture over medium heat, stirring often, until the butter melts and the mixture is just about to come to a simmer. Do not let it boil.

Step 3

Remove the saucepan from heat and immediately stir in the cassava flour and tapioca starch. Mix until a thick dough forms and pulls away from the sides of the pan. Let the mixture cool for 5 to 10 minutes, or until it's safe to handle.

Step 4

Transfer the dough to a large mixing bowl. Add the eggs one at a time, mixing thoroughly after each addition to incorporate. The dough will become sticky and glossy.

Step 5

Stir in the Parmesan cheese and baking powder until evenly distributed throughout the dough.

Step 6

Scoop out portions of the dough (about 2 to 3 tablespoons each) and roll them into smooth balls. Place them on the prepared baking sheet, leaving at least 2 inches of space between each bun.

Step 7

Bake the buns in the preheated oven for 20 to 25 minutes, or until they are golden brown and puffed up.

Step 8

Remove the buns from the oven and let them cool slightly before serving. Enjoy warm or at room temperature as a snack or accompaniment to your meal.
