Ingredients

  • 2 cups rolled oats

  • 0.5 cup peanut butter or almond butter
  • 0.25 cup brown sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.25 cup mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, nuts or seeds, dried fruit, cinnamon, and salt. Stir to evenly distribute.

Step 3

In a small saucepan over low heat, combine the honey or maple syrup, peanut butter or almond butter, and brown sugar. Stir constantly until fully melted and smooth, about 2-3 minutes. Remove from heat and stir in the vanilla extract.

Step 4

Pour the warm honey-butter mixture over the dry ingredients in the bowl. Use a spatula to mix everything together until evenly coated. If using mini chocolate chips, fold them in at this stage after the mixture has cooled slightly to prevent melting.
