Ingredients

  • 120 grams all-purpose flour
  • 3 large eggs
  • 300 milliliters whole milk
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons vegetable oil or beef drippings

Directions

Step 1

Preheat your oven to 220°C (425°F).

Step 2

In a medium-sized bowl, whisk together the flour, salt, and black pepper.

Step 3

In a separate bowl or measuring jug, beat together the eggs and milk until smooth and well-combined.

Step 4

Slowly pour the wet mixture into the dry ingredients, whisking constantly to avoid lumps. The batter should be smooth and the consistency of heavy cream.

Step 5

Add the chopped fresh thyme and rosemary to the batter, then mix well.

Step 6

Place a muffin tin or Yorkshire pudding tin in the oven to heat for 5 minutes.

Step 7

Carefully remove the hot tin from the oven and quickly pour about 1/2 teaspoon of vegetable oil or beef drippings into each cavity.

Step 8

Place the tin back in the oven for 2 minutes to ensure the oil is very hot.

Step 9

Quickly and carefully pour the batter into the hot oil-filled cavities, filling each about halfway full.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the puddings are golden, puffed, and crisp.

Step 11

Resist opening the oven door while baking, as this can cause the puddings to collapse.

Step 12

Remove from the oven and serve immediately, either alongside a roast dinner or with your favorite gravy.
