Ingredients

  • 150 grams all-purpose flour
  • 4 large eggs
  • 200 milliliters whole milk
  • 100 milliliters water
  • 1 teaspoon salt
  • 2 tablespoons beef fat or drippings
  • 500 grams roast beef
  • 200 milliliters gravy (optional)

Directions

Step 1

Preheat your oven to 220°C (425°F).

Step 2

In a large mixing bowl, whisk together the flour and salt.

Step 3

In a separate bowl, beat the eggs, then slowly whisk them into the flour mixture.

Step 4

Gradually add the milk and water to the batter, whisking continuously until smooth and lump-free. Let the batter rest for 10-15 minutes.

Step 5

Place a muffin tray or individual pudding molds in the oven to heat up for 5 minutes.

Step 6

Remove the tray from the oven and add 1/2 teaspoon of beef fat or drippings to each mold. Return the tray to the oven until the fat is smoking hot, about 2-3 minutes.

Step 7

Carefully pour the batter into the molds, filling each one about halfway.

Step 8

Bake in the preheated oven for 20-25 minutes without opening the door, until the puddings are golden and well-risen.

Step 9

While the puddings are baking, warm the roast beef in the oven or on the stovetop, ensuring it’s hot and tender.

Step 10

Once the Yorkshire puddings are cooked, remove them from the oven. Cut a small opening in the top of each pudding and stuff with slices of roast beef.

Step 11

Serve immediately with a drizzle of gravy, if desired.
