Ingredients

  • 120 grams All-purpose flour
  • 3 pieces Large eggs
  • 240 ml Whole milk
  • 0.5 teaspoons Salt
  • 2 tablespoons Vegetable oil (or beef drippings)

Directions

Step 1

Preheat your oven to 220°C (425°F). Place the muffin or popover tin in the oven to heat as well.

In a mixing bowl, whisk together the flour and salt.

In a separate bowl, beat the eggs until frothy, then gradually whisk in the milk.

Step 4

Slowly pour the wet ingredients into the dry ingredients, whisking continuously until the batter is smooth and lump-free. Let the batter rest for at least 10 minutes.

Once the oven and tin are fully heated, carefully remove the tin and pour about 1/2 teaspoon of vegetable oil or beef drippings into each well. Return the tin to the oven for 2 minutes to heat the oil.

Working quickly, pour the batter evenly into each well of the tin, filling them about two-thirds full.

Bake in the oven for 20 minutes without opening the door to ensure they rise properly. They should be golden brown and puffed up at the end.
