In a medium mixing bowl, combine the plain yoghurt, honey, and vanilla extract (if using). Stir until well blended and creamy.
Wash and prepare the fresh fruit. Slice or chop larger fruits into small, bite-sized pieces if needed.
Select your popsicle molds and begin layering. Add a spoonful of the yoghurt mixture into each mold, followed by a layer of fruit. Alternate layers of yoghurt and fruit until the molds are filled, leaving about 1/4 inch of space at the top to allow for expansion when freezing.
Gently tap the molds on a countertop to remove air bubbles and help the layers settle.
Insert popsicle sticks into the molds, making sure they are centered.
Place the molds in the freezer and allow the popsicles to freeze for at least 4-6 hours, or until completely solid.
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds to loosen them. Pull gently to release.
