Ingredients

  • 1 cup Wheat bran
  • 1 cup Plain yoghurt
  • 1 cup All-purpose flour
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 0.25 cup Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or dried fruit (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the tin with cooking spray.

Step 2

In a large bowl, combine the wheat bran and yoghurt. Let the mixture sit for 10 minutes to allow the bran to soften.

Step 3

In a separate bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.

Step 4

In another smaller bowl, beat the egg, then stir in the melted butter and vanilla extract.

Step 5

Pour the egg mixture into the bowl with the bran and yoghurt. Stir until well combined.

Step 6

Add the dry ingredients into the wet ingredients gradually, stirring just until incorporated. Do not overmix, as this can make the muffins dense.

Step 7

If using raisins or dried fruit, gently fold them into the batter.

Step 8

Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.

Step 9

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
