Ingredients

  • 1 pack Store-bought croissant dough
  • 200 g Plain Greek yoghurt
  • 250 g Pineapple chunks (fresh or canned)
  • 2 tbsp Honey
  • 1 tsp Vanilla extract
  • 1 Egg
  • 1 tbsp Powdered sugar

Directions

Step 1

Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix the plain Greek yoghurt, honey, and vanilla extract until well combined. Set aside.

Step 3

Chop the pineapple chunks into small pieces if they aren't already bite-sized. Drain any excess juice if using canned pineapple.

Step 4

Unroll the croissant dough and separate it into individual triangles along the perforated lines.

Step 5

Place a small spoonful (about 1 tablespoon) of the yoghurt mixture on the wider end of each croissant triangle.

Step 6

Add a few pieces of pineapple on top of the yoghurt mixture, being careful not to overfill.

Step 7

Gently roll each triangle from the wider end to the pointed tip, forming a croissant shape. Tuck the ends slightly to prevent the filling from spilling out during baking.

Step 8

Place the rolled croissants on the prepared baking sheet, spacing them at least 2 inches apart.

Step 9

Beat the egg in a small bowl and brush it lightly over the top of each croissant for a golden finish.

Step 10

Bake in the preheated oven for 18-20 minutes, or until the croissants are golden brown and puffed up.

Step 11

Remove from the oven and let them cool for about 5 minutes.

Step 12

Dust lightly with powdered sugar before serving, if desired. Serve warm or at room temperature and enjoy!
