Ingredients

  • 100 grams Raisins
  • 80 ml Dark rum
  • 500 ml Water
  • 200 grams Granulated sugar
  • 50 ml Freshly squeezed lime juice
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Place the raisins in a small bowl and pour 50 ml of the dark rum over them. Stir well, cover the bowl, and let the raisins soak for at least 1 hour, or preferably overnight, until plump.

Step 2

In a medium saucepan, combine the water, granulated sugar, and salt. Heat the mixture over medium heat, stirring occasionally, until the sugar has completely dissolved. This should take about 3-5 minutes. Remove the saucepan from the heat and allow the syrup to cool slightly.

Step 3

Once the syrup has cooled to room temperature, add the lime juice, the remaining 30 ml of dark rum, and vanilla extract. Stir well to combine.

Drain the soaked raisins, reserving any leftover rum, and set them aside. Add the reserved rum (if any) into the sorbet mixture for extra flavor.

Pour the sorbet mixture into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes about 20-25 minutes.
