Ingredients

  • 2 cups (grated) yellow squash
  • 0.5 cups all-purpose flour

  • 2 tablespoons (finely chopped) green onions
  • 2 tablespoons (melted) unsalted butter
  • 1 tablespoons (chopped, optional garnish) parsley

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a muffin tin.

Grate the yellow squash and place it in a clean kitchen towel. Squeeze out as much excess liquid as possible, then measure 2 cups of the grated and drained squash.
