Ingredients

  • 4 medium-sized Yellow squash
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Wash and dry the yellow squash. Slice each squash into 1/4-inch thick rounds.

Step 2

Peel and mince the garlic cloves. Peel the red onion and thinly slice it into half moons. Halve the cherry tomatoes.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Once the oil is hot, add the sliced red onion to the skillet. Sauté for 2-3 minutes until the onion starts to soften.

Step 5

Add the minced garlic and cook for 1 more minute, stirring frequently, until fragrant.

Step 6

Add the yellow squash rounds to the skillet. Stir to coat them in the oil, garlic, and onion mixture. Spread them out in an even layer and let them cook undisturbed for 3 minutes to develop a slight golden color.

Step 7

Stir the squash and cook for an additional 3-4 minutes, or until the squash is tender but still holds its shape.

Step 8

Stir in the halved cherry tomatoes, salt, black pepper, and red pepper flakes, if using. Cook for another 2 minutes until the tomatoes begin to soften.

Step 9

Remove the skillet from heat and sprinkle the grated Parmesan cheese and fresh parsley over the dish.

Step 10

Serve warm as a side dish or a light main course. Enjoy your Yellow Squash Dinner!
