  • 2 tablespoons, chopped fresh parsley (optional garnish)

Directions

Step 1

Rinse the yellow split peas thoroughly under cold water and set aside.

Heat the olive oil in a large soup pot over medium heat.

Add the diced onion, carrot, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables are softened.
