Ingredients

  • 2 large ripe mangoes
  • 2 small habanero peppers (adjust to spice preference)
  • 1 inch piece fresh ginger
  • 3 whole garlic cloves
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 tablespoons olive oil
  • 0.25 cup fresh cilantro leaves (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and pit the mangoes, then dice the flesh into small chunks.

Step 2

Remove the stems from the habanero peppers. For less heat, remove and discard the seeds; otherwise, leave the seeds in for maximum spiciness.

Step 3

Peel and roughly chop the ginger and garlic cloves.

Step 4

In a blender or food processor, combine the mango chunks, habanero peppers, ginger, garlic, lime juice, soy sauce, honey, olive oil, fresh cilantro leaves (if using), ground cumin, salt, and black pepper.

Step 5

Blend on high speed until the mixture is smooth and creamy. Scrape down the sides of the blender as needed to ensure all the ingredients are thoroughly combined.

Step 6

Taste the marinade and adjust the seasoning, adding more salt, lime juice, or honey if necessary.

Step 7

Transfer the marinade to a jar or airtight container. It can be used immediately or refrigerated for up to 3 days.

Step 8

To use, coat your protein or vegetables generously with the marinade and let sit for at least 30 minutes (or up to 24 hours in the refrigerator) before cooking.
