  • 500 g beef stew meat (cut into 1-inch cubes)
  • 600 g yam (peeled and cubed)

  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • 1 tsp ground paprika
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 leaf bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley (chopped, for garnish)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Season the beef chunks with a pinch of salt and black pepper, then sear them in batches until browned on all sides. Remove the beef and set aside.
