Ingredients

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups whole milk
  • 1 cup heavy cream
  • 6 cups powdered sugar
  • 1.5 cups unsalted butter (for frosting)
  • 1.5 teaspoons vanilla extract (for frosting)
  • 0.5 cup multicolored sprinkles (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

In a separate bowl, cream the softened butter using a hand or stand mixer until light and fluffy, about 2 minutes.

Step 4

Add the eggs to the butter, one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until the batter is smooth and free of lumps.

Step 6

Evenly divide the batter among the three prepared cake pans. Tap the pans gently on the counter to remove air bubbles.

Step 7

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Allow the cakes to cool in their pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.

Step 9

While the cakes cool, make the frosting: In a large mixing bowl, beat the powdered sugar and 1.5 cups of unsalted butter on low speed until combined, then increase speed to medium and beat until light and fluffy, about 2-3 minutes. Add the vanilla extract and heavy cream, and continue beating until smooth.

Step 10

Once the cakes are completely cooled, level the tops using a serrated knife if necessary. Place the first cake layer on a serving plate or cake stand, and spread an even layer of frosting over the top.

Step 11

Repeat with the second and third layers, spreading frosting on the top and sides of the cake until fully covered. Smooth the frosting with an offset spatula.

Step 12

Decorate with multicolored sprinkles if desired. Chill the cake in the refrigerator for 30 minutes before serving to set the frosting.

Step 13

Slice, serve, and enjoy your Xtra Special Celebration Cake!
