Ingredients

  • 4 medium (ripe) Tomatoes
  • 1 large Cucumber
  • 1 small Red onion
  • 1 medium Green bell pepper
  • 0.5 cup Kalamata olives
  • 200 grams Feta cheese
  • 4 tablespoons Extra virgin olive oil
  • 1 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash all the vegetables thoroughly under cold running water.

Step 2

Cut the tomatoes into bite-sized wedges and place them in a large bowl.

Step 3

Peel the cucumber, remove seeds if desired, and slice it into half-moons. Add them to the bowl with the tomatoes.

Step 4

Slice the red onion thinly, then immerse the slices in cold water for a few minutes to reduce the intensity. Drain and add them to the bowl.

Step 5

Remove the seeds and core from the green bell pepper, then slice it into thin rings. Add these to the salad bowl as well.

Step 6

Add the Kalamata olives to the mixture.

Step 7

Cut the feta cheese into one large block or into smaller cubes, depending on preference, and place it on top of the salad.

Step 8

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.

Step 9

Drizzle the dressing evenly over the salad.

Step 10

Gently toss the salad, being careful not to crumble the feta too much, or leave it as is for presentation.

Step 11

Serve immediately with crusty bread or as a side dish to your favorite Greek-inspired meal.
