Ingredients

  • 4 pieces (6-8 ounces each) Wahoo fish fillets
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 cloves (minced) Garlic
  • 2 tablespoons Lemon juice
  • 2 tablespoons (chopped) Fresh parsley
  • 4 pieces (for garnish) Lemon wedges

Directions

Step 1

Pat the wahoo fillets dry with paper towels. Season both sides with salt, black pepper, and paprika.

Step 2

Heat a large skillet over medium-high heat and add olive oil.

Step 3

Once the oil is hot, add the wahoo fillets to the skillet. Cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove the fillets from the skillet and set them aside.

Step 4

Reduce the heat to medium and add the butter to the same skillet. Let it melt completely.

Step 5

Add the minced garlic to the melted butter and sauté for about 30 seconds, until fragrant but not browned.

Step 6

Stir in the lemon juice and let it cook for 1-2 minutes to allow the flavors to combine.

Step 7

Turn off the heat and sprinkle the fresh parsley into the sauce.

Step 8

Pour the lemon butter sauce over the seared wahoo fillets.

Step 9

Serve immediately with lemon wedges on the side for garnish.
