Ingredients

  • 8 pieces corn tortillas
  • 1 cup vegan cheddar cheese

  • 2 cups cooked lentils
  • 2 tablespoons taco seasoning
  • 2 tablespoons nutritional yeast
  • 1 cup ground cornflakes (Gluten-Free)
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 medium tomato, diced
  • 1 cup lettuce, shredded
  • 1 medium avocado, sliced
  • 0.5 cup vegan sour cream
  • 1 medium lime, cut into wedges

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the cooked lentils and taco seasoning. Stir well to combine and cook until warmed through, about 5 minutes.
