Ingredients

  • 4 pieces veal chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces shallots, finely chopped
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 0.5 cup dry white wine
  • 0.5 cup chicken or beef broth
  • 0.25 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped

Directions

Step 1

Season both sides of the veal chops with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the veal chops and sear on each side for 4-5 minutes or until golden brown. Remove the chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the butter to the same skillet. Once melted, add the chopped shallots and cook for 2-3 minutes until softened.

Step 4

Add the sliced mushrooms to the skillet and cook for about 5 minutes, stirring occasionally, until they release their moisture and become golden brown.

Step 5

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 6

Deglaze the skillet by pouring in the dry white wine. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes until it's reduced by half.

Step 7

Add the chicken or beef broth and bring the mixture to a simmer. Return the veal chops to the skillet, spooning some of the sauce over them.

Step 8

Cover the skillet and let the veal chops cook for about 8-10 minutes, depending on their thickness, until they reach an internal temperature of 145°F (63°C).

Step 9

Remove the veal chops again and set aside to rest.

Step 10

Reduce the heat to low and whisk the heavy cream and thyme into the sauce. Let it simmer gently for 2-3 minutes until slightly thickened, then taste and adjust seasoning with salt and pepper if needed.

Step 11

Serve the veal chops topped with the mushroom sauce and garnish with fresh parsley.
