Ingredients

  • 1.25 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.25 cups Unsalted butter (melted, for topping)

  • 6 rings Pineapple slices (canned, drained, and cut into small pieces)
  • 0.5 cups Unsalted butter (room temperature, for batter)
  • 0.5 cups Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cups Whole milk

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin thoroughly.

Step 2

In a small bowl, mix the melted butter (for topping) and brown sugar until combined. Spoon about 1 teaspoon of the mixture into the bottom of each muffin cup and spread evenly.
