  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 cup sour cream
  • 0.25 cup whole milk
  • 1.5 cups shredded sharp cheddar cheese
  • 0.5 cup cooked bacon, crumbled
  • 3 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Wash and scrub the potatoes thoroughly, then pat them dry with a towel.

Step 2

Pierce each potato several times with a fork. Rub them with olive oil and sprinkle with a pinch of salt for crispy skins.

Step 3

Place the potatoes directly on the oven rack and bake for 1 hour, or until tender when pierced with a knife. Remove from the oven and reduce the temperature to 375°F (190°C).

Allow the potatoes to cool for about 10 minutes, or until they are cool enough to handle. Cut each one in half lengthwise.
