Ingredients

  • 14 oz Canned salmon (boneless, skinless)
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 1 small, finely diced Yellow onion
  • 2 tbsp, chopped Fresh parsley
  • 1 tbsp, chopped Fresh dill
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Vegetable oil
  • 1 optional, for serving Lemon wedges

Directions

Step 1

Drain the canned salmon, reserving 1-2 tablespoons of the liquid, and place the salmon in a large mixing bowl. Gently flake the salmon with a fork.

Step 2

Add the finely diced onion, chopped parsley, and chopped dill to the bowl. Mix to combine.

Step 3

In a separate small bowl, whisk the eggs until fully beaten, then add them to the salmon mixture.

Step 4

Season the mixture with salt and black pepper. Pour in the breadcrumbs and the reserved salmon liquid to bind the mixture together. Stir until well combined and firm enough to shape.

Step 5

With clean hands, form the mixture into 8 evenly sized patties, about 2 1/2 inches in diameter.

Step 6

Heat vegetable oil in a large skillet over medium heat. Once the oil is hot but not smoking, carefully add the salmon croquettes to the pan. Avoid overcrowding the skillet; cook in batches if necessary.

Step 7

Pan-fry the croquettes for 3-4 minutes per side, or until golden brown and crispy. Use a spatula to gently flip them to avoid breaking.

Step 8

Transfer the cooked croquettes to a plate lined with paper towels to drain excess oil.

Step 9

Serve warm with optional lemon wedges and a side of your choice, such as a green salad or roasted vegetables.
