Ingredients

  • 2 pieces Chicken breast
  • 3 medium Golden or russet potatoes
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 1 large Yellow onion
  • 3 large Garlic cloves
  • 3 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 4 large Eggs (optional)

Directions

Step 1

Dice the chicken breasts into bite-sized cubes and season with half of the paprika, thyme, salt, and black pepper. Set aside.

Step 2

Peel the potatoes and dice them into 1/2-inch cubes. Place them in a pot of salted boiling water and parboil for 5 minutes. Drain and set aside.

Step 3

Core and dice the red and green bell peppers into small pieces. Peel and dice the onion. Mince the garlic cloves finely.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken cubes and cook until golden and fully cooked, about 5-7 minutes. Remove from the pan and set aside.

Step 5

In the same skillet, add the remaining olive oil and the butter. Once melted, toss in the parboiled potatoes. Cook, stirring occasionally, until the potatoes are golden and crispy, about 8-10 minutes.
