Ingredients

  • 4 slices Bacon rashers
  • 4 links Sausages
  • 2 slices Black pudding
  • 2 slices White pudding
  • 2 slices Potato bread
  • 2 slices Soda bread
  • 2 large Eggs
  • 1 large Tomatoes
  • 100 grams Mushrooms
  • 2 tablespoons Butter
  • 2 tablespoons Vegetable oil
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large frying pan over medium heat.

Step 2

Add the bacon rashers and sausages to the pan and cook until golden brown, turning occasionally. Remove them from the pan and set aside on a plate lined with paper towels to drain excess oil.

Step 3

In the same pan, add the slices of black pudding and white pudding. Cook for 2-3 minutes on each side until crispy and heated through. Remove and set aside with the bacon and sausages.

Step 4

Reduce the heat slightly and add the slices of potato bread and soda bread to the pan. Fry them in the rendered fat for 1-2 minutes on each side until golden and crisp. Remove and set aside.

Wipe the pan clean if necessary, then add a bit more oil or butter. Slice the tomato in half and add it to the pan, cut side down. Cook for 2-3 minutes until lightly caramelized. Add the mushrooms and cook for another 4-5 minutes, stirring occasionally. Season with salt and black pepper. Remove and set aside.

In a separate pan, heat 1 tablespoon of butter over medium heat. Crack the eggs into the pan and fry them to your desired doneness (sunny side up is traditional). Sprinkle with a pinch of salt and black pepper.

Plate the Ulster Fry by arranging the bacon, sausages, black pudding, white pudding, potato bread, soda bread, fried tomatoes, mushrooms, and eggs attractively on a large platter or individual plates.
