  • 100 grams Spinach leaves (fresh)
  • 250 grams All-purpose flour

  • 2 liters Water (for boiling noodles)

Directions

Step 1

Wash and dry the spinach leaves thoroughly. Blanch them in boiling water for 30 seconds, then immediately transfer to an ice bath to retain their color.

Squeeze out any excess water from the spinach and puree it in a blender or food processor until smooth.

In a large bowl, combine the flour, pureed spinach, eggs, olive oil, and 1/2 teaspoon of salt. Mix until a dough begins to form.
