Ingredients

  • 4 pieces large russet potatoes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 0.5 cup sour cream
  • 0.25 cup milk
  • 1 cup cheddar cheese, grated
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons green onions, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry, then rub the potatoes with olive oil and place on a baking sheet.

Step 3

Bake the potatoes in the preheated oven for about 60 minutes, or until they are fork-tender.

Step 4

Remove potatoes from the oven and allow them to cool slightly, about 10 minutes. Reduce the oven temperature to 375°F (190°C).

Step 5

Cut each potato in half lengthwise. Carefully scoop out the inside of each half into a bowl, leaving a 1/4-inch rim of potato on the skin to hold the shape.

Step 6

To the bowl with potato flesh, add the butter, sour cream, and milk. Mash the ingredients together until smooth and creamy.

Step 7

Stir in half of the cheddar cheese, all the bacon, green onions, salt, and pepper. Mix until well combined.

Step 8

Spoon the creamy potato mixture back into the potato skins, mounding slightly.

Step 9

Sprinkle the remaining cheddar cheese evenly over the tops of the filled potatoes.

Step 10

Return the filled potatoes to the oven and bake for another 20-25 minutes, or until the cheese is melted and the tops are golden brown.

Step 11

Remove from the oven and let cool slightly before serving. Enjoy your delicious twice-baked potatoes!
