  • 4 large Russet potatoes
  • 4 tablespoons Unsalted butter
  • 1 cup Sour cream

  • 1 cup Shredded cheddar cheese

  • 0.5 cup Cooked bacon, crumbled
  • 2 tablespoons Fresh chives, finely chopped
  • 2 large Eggs
  • 0.5 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Lightly grease a 12-cup muffin tin or line it with baking cups.

Step 2

Scrub the russet potatoes clean, then pierce each one several times with a fork. Place the potatoes directly on the oven rack and bake for 50 minutes, or until fork-tender.

Once the potatoes are cool enough to handle, slice them in half and scoop the flesh into a large mixing bowl. Discard the skins or save them for another recipe.
