Ingredients

  • 6 large Russet potatoes
  • 4 tablespoons Butter
  • 1 cup Milk
  • 1 cup Sour cream
  • 2 cups Cheddar cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Chives
  • 4 slices Bacon

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Scrub and pierce the potatoes several times with a fork. Place them directly onto the oven rack and bake for 60 minutes or until tender.

Step 3

While the potatoes are baking, cook the bacon in a skillet until crispy. Transfer to a paper towel-lined plate, crumble once cooled, and set aside.

Step 4

Once the potatoes are cool enough to handle, slice each in half lengthwise and scoop the flesh into a large mixing bowl, leaving a thin shell for structure.

Step 5

Add butter, milk, sour cream, garlic powder, salt, and black pepper to the potato flesh. Mash everything together until smooth and creamy. Adjust the seasoning if needed.

Step 6

Fold in 1 1/2 cups of shredded cheddar cheese and half of the crumbled bacon, mixing until evenly distributed.

Step 7

Spoon the mashed potato mixture back into the potato shells, mounding them slightly over the top.

Step 8

Place the filled potato halves onto a baking sheet and sprinkle the remaining cheddar cheese over the top.

Step 9

Return the potatoes to the oven and bake for 15-20 minutes, or until the cheese is melted and lightly golden.

Step 10

Remove from the oven and garnish with the remaining bacon and chopped chives. Serve hot and enjoy!
