Ingredients

  • 4 cups All-purpose flour
  • 2.25 teaspoons Active dry yeast
  • 1.5 cups Warm water (110°F/45°C)
  • 0.25 cups Extra virgin olive oil
  • 2 tablespoons Sugar
  • 1.5 teaspoons Salt
  • 2 tablespoons Fresh rosemary (finely chopped)
  • 2 cloves Garlic (minced)
  • 2 tablespoons Unsalted butter (melted, for brushing)

Directions

Step 1

In a large mixing bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes, or until the mixture becomes frothy.

Step 2

Add the olive oil, salt, garlic, and fresh rosemary to the yeast mixture. Stir to combine.

Step 3

Gradually add the flour, 1 cup at a time, mixing with a wooden spoon or using a stand mixer with a dough hook attachment. Continue until a soft dough forms that pulls away from the sides of the bowl.

Step 4

Transfer the dough to a lightly floured surface and knead for 8-10 minutes by hand (or 5-6 minutes in the stand mixer) until the dough is smooth and elastic.

Step 5

Place the kneaded dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until the dough has doubled in size.

Step 6

Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a parchment-lined baking sheet, spaced slightly apart.

Step 7

Cover the rolls with a towel and allow them to rise again for 30-40 minutes, or until doubled in size.

Step 8

Preheat your oven to 375°F (190°C).

Step 9

Brush the tops of the rolls with melted butter. Optionally, sprinkle with a pinch of extra chopped rosemary or a light dusting of coarse sea salt.

Step 10

Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

Step 11

Remove the rolls from the oven and allow them to cool on a wire rack for at least 10 minutes before serving.

Step 12

Serve warm or at room temperature. These rolls pair perfectly with soups, pasta, or as a base for sandwiches.
