Ingredients

  • 16 oz Elbow macaroni (or pasta of choice)
  • 4 tbsp Unsalted butter
  • 0.25 cup All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups Mozzarella cheese, shredded
  • 1 cup White cheddar cheese, shredded
  • 0.5 cup Sun-dried tomatoes (packed in oil), chopped
  • 3 cups Spinach, fresh
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 tsp Nutmeg (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the macaroni according to package instructions until al dente. Drain and set aside.

In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour to create a roux, cooking for about 1 minute until lightly golden.

Slowly whisk in the milk and heavy cream, ensuring no lumps remain. Cook, stirring frequently, until the mixture thickens slightly, about 3-4 minutes.
