Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 12 ounces penne pasta
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, sliced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 0.5 teaspoons crushed red pepper flakes (optional)
  • 2 tablespoons chopped parsley (for garnish)

Directions

Step 1

Season the chicken breasts on both sides with kosher salt, black pepper, and dried Italian seasoning.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and fully cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set aside.

Step 3

Cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.

Step 4

In the same skillet used to cook the chicken, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the sliced sun-dried tomatoes and cook for another 1-2 minutes.

Step 6

Pour in the heavy cream and bring it to a gentle simmer. Lower the heat and gradually whisk in the grated Parmesan cheese until fully melted and the sauce is smooth.

Step 7

Stir in the baby spinach and allow it to wilt in the sauce, about 1-2 minutes. If desired, add the crushed red pepper flakes for a hint of spice.

Step 8

Slice the cooked chicken breasts into strips and add them to the skillet, along with the cooked penne pasta. Toss everything together until the pasta and chicken are fully coated in the sauce.

Step 9

Taste and adjust the seasoning with additional salt and pepper, if needed.

Step 10

Garnish with chopped parsley before serving. Serve hot and enjoy your creamy Tuscan Chicken Pasta!
