Ingredients

  • 400 g All-purpose flour
  • 7 g Active dry yeast
  • 5 g Sugar
  • 250 ml Warm water
  • 30 ml Olive oil
  • 5 g Salt
  • 250 g Ground lamb
  • 30 g Tomato paste
  • 1 Red bell pepper
  • 1 Onion
  • 2 Garlic cloves
  • 20 g Parsley
  • 5 g Ground cumin
  • 5 g Paprika
  • 3 g Chili flakes
  • 4 Lemon wedges

Directions

Step 1

In a large mixing bowl, combine the flour, yeast, sugar, and salt. Add the warm water and olive oil, then mix until a dough forms.

Step 2

Knead the dough on a floured surface for 8-10 minutes, or until smooth and elastic. Place the dough in an oiled bowl, cover with a damp towel, and let it rise in a warm place for 1 hour, or until doubled in size.

Step 3

In the meantime, prepare the topping: finely dice the red bell pepper, onion, and garlic. Chop the parsley finely.

Step 4

In a separate bowl, mix the ground lamb, tomato paste, diced vegetables, chopped parsley, cumin, paprika, chili flakes, and a pinch of salt. Combine everything well to create a uniform topping mixture.

Step 5

Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into a thin, round sheet about 25 cm in diameter.

Step 6

Preheat your oven to 220°C (430°F) or the highest setting. Place a baking sheet or pizza stone in the oven to heat.

Step 7

Spread a thin layer of the lamb mixture evenly over each rolled-out dough sheet, pressing it down slightly with the back of a spoon to adhere.

Step 8

Transfer the topped dough onto the preheated baking sheet or pizza stone and bake for 7-10 minutes, or until the edges are golden and crispy.

Step 9

Remove the Turkish Pizza from the oven and serve immediately with fresh lemon wedges for squeezing on top. Optionally, roll them up like wraps and enjoy!
