  • 12 pounds Whole turkey
  • 6 tablespoons Unsalted butter
  • 2 tablespoons Salt
  • 1 tablespoon Ground black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Garlic powder
  • 1 Yellow onion, quartered
  • 2 Carrots, roughly chopped
  • 2 Celery sticks, roughly chopped
  • 2 cups Chicken or turkey broth

Directions

Step 1

Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out with cold water, then pat dry with paper towels.

Step 2

Preheat your oven to 450°F (230°C).

Step 3

In a small bowl, mix the salt, ground black pepper, thyme, rosemary, and garlic powder. Rub this seasoning mixture all over the turkey, including under the skin and inside the cavity.

Place the quartered onion, chopped carrots, and celery into the cavity of the turkey.

Rub the unsalted butter all over the surface of the turkey.

Place the turkey on a rack in a large roasting pan. Pour the chicken or turkey broth into the bottom of the pan to prevent drippings from burning.
