Ingredients

  • 1 lb Ground turkey
  • 1 medium Zucchini
  • 1 medium Carrot
  • 0.5 medium Yellow onion
  • 2 cloves Garlic
  • 0.5 cup Breadcrumbs
  • 0.25 cup Grated Parmesan cheese
  • 1 large Egg
  • 2 tbsp Fresh parsley
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Grate the zucchini and carrot using a box grater. Use a clean kitchen towel to squeeze out excess moisture from the grated vegetables.

Step 3

Finely chop the onion and parsley, and mince the garlic.

Step 4

In a large mixing bowl, combine the ground turkey, grated zucchini, grated carrot, chopped onion, minced garlic, breadcrumbs, Parmesan cheese, egg, parsley, salt, and black pepper.
