  • 1 pound ground turkey
  • 1 medium yellow onion, diced

  • 2 medium carrot, diced
  • 2 celery stalk, diced
  • 28 ounces canned crushed tomatoes
  • 4 cups chicken or turkey stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups baby spinach (optional)
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks. This should take about 5-7 minutes. Remove the turkey from the pot and set it aside.

In the same pot, add the diced onion, minced garlic, diced carrot, and diced celery. Cook until the vegetables are softened, about 5 minutes.
