Ingredients

  • 4 whole Bell peppers
  • 2 tablespoons Olive oil
  • 1 pound Ground turkey
  • 1 cup Yellow onion, diced
  • 3 cloves Garlic, minced
  • 1 cup Cooked white or brown rice
  • 1 14-ounce can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Shredded mozzarella cheese
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly rub the outside of the peppers with 1 tablespoon of olive oil and set aside.

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently, until fragrant.

Add the ground turkey to the skillet and cook for 5-7 minutes, breaking it up with a spoon, until it is fully cooked and no longer pink.

Stir in the cooked rice, diced tomatoes (with their juice), tomato paste, Italian seasoning, smoked paprika, salt, and black pepper. Cook for another 2-3 minutes, stirring well to combine.
