Ingredients

  • 4 pieces Turkey cutlets
  • 0.5 cups All-purpose flour
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 0.5 cups Dry white wine
  • 0.75 cups Chicken broth
  • 3 tablespoons Lemon juice, freshly squeezed
  • 2 tablespoons Capers, drained
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the turkey cutlets with salt and pepper on both sides.

Step 2

Place the flour in a shallow bowl and dredge each turkey cutlet in the flour, shaking off excess.

Step 3

Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 4

Cook the turkey cutlets in batches, 2-3 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside on a plate covered with foil to keep warm.

Step 5

In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for 1 minute until fragrant.

Step 6

Deglaze the skillet with white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.

Step 7

Stir in the chicken broth, lemon juice, and capers. Bring the mixture to a gentle simmer and cook for 3-4 minutes to allow the flavors to meld.

Step 8

Return the turkey cutlets to the skillet, spooning the sauce over them. Let them simmer in the sauce for 2-3 minutes to warm through.

Step 9

Garnish with chopped parsley and serve immediately. Pair with pasta, rice, or sautéed vegetables for a complete meal.
