Ingredients

  • 1 pound Ground turkey or chicken
  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 3 units Garlic cloves, minced
  • 2 tablespoons Taco seasoning
  • 1 15-ounce can Canned black beans, drained and rinsed
  • 1 15-ounce can Canned corn, drained
  • 1 10-ounce can Diced tomatoes with green chilies
  • 6 units Flour or corn tortillas (soft)
  • 2 cups Shredded Mexican blend cheese
  • 1 cup Salsa
  • 2 tablespoons Cilantro leaves, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, cooking until fragrant and softened, about 3-5 minutes.

Step 3

Add the ground turkey or chicken to the skillet. Cook and crumble the meat until browned and fully cooked, about 6-8 minutes.

Step 4

Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Simmer for 5 minutes to allow the flavors to meld together. Remove the skillet from heat.

Step 5

Grease a 9x13-inch baking dish lightly with cooking spray or oil. Place two tortillas on the bottom of the dish, overlapping if necessary.

Step 6

Spread a layer of the turkey or chicken mixture evenly over the tortillas, followed by a layer of shredded cheese (about 1/3 of the total cheese).

Step 7

Repeat the layering process (tortillas, meat mixture, cheese) two more times, finishing with a layer of cheese on top.

Step 8

Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the dish from the oven and let it cool slightly for 5 minutes. Garnish with chopped cilantro, if desired.

Step 10

Serve warm with salsa, sour cream, or guacamole on the side, if preferred.
