  • 2 tablespoons tomato paste
  • 1 whole bay leaf
  • 0.5 teaspoon thyme, dried
  • 0.5 teaspoon paprika, smoked or regular
  • 2 cups spinach, fresh

Directions

Step 1

In a large mixing bowl, combine ground turkey, breadcrumbs, grated parmesan cheese, egg, 2 cloves of minced garlic, half of the chopped onion, parsley, 1 teaspoon of salt, and 0.5 teaspoon of black pepper. Mix well until evenly combined.

Step 2

Form the turkey mixture into small meatballs, about 1 inch in diameter. Set aside on a plate.

In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the meatballs in batches and cook until browned on all sides, about 5-6 minutes total. Remove the meatballs and set them aside.
