Ingredients

  • 12 oz Elbow macaroni
  • 1 lb Ground turkey
  • 2 tbsp Olive oil
  • 1 Yellow onion, diced
  • 3 cloves Garlic, minced
  • 14.5 oz Canned diced tomatoes, drained
  • 1 cup Tomato sauce
  • 0.5 cup Chicken or turkey broth
  • 1 tsp Italian seasoning
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Cheddar cheese, shredded
  • 1 cup Mozzarella cheese, shredded
  • 2 tbsp Fresh parsley, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the elbow macaroni in a large pot of salted boiling water until al dente, according to package instructions. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for 1 additional minute.

Step 4

Add the ground turkey to the skillet. Cook, breaking it up with a spoon, until it is fully cooked and browned, about 5-7 minutes.

Step 5

Stir in the canned diced tomatoes, tomato sauce, chicken or turkey broth, Italian seasoning, paprika, salt, and black pepper. Let the mixture simmer for 5-7 minutes.

Step 6

Remove the skillet from heat and stir in the cooked macaroni until evenly coated with the turkey-tomato mixture.

Step 7

Transfer half of the mixture into a lightly greased 9x13-inch baking dish. Sprinkle 1 cup of cheddar cheese evenly over the layer.

Step 8

Add the remaining turkey and macaroni mixture to the dish, spreading it out evenly. Top with the remaining cheddar cheese and the mozzarella cheese.

Step 9

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes. Garnish with chopped parsley, if desired, and serve warm.
