Ingredients

  • 500 g Ground turkey
  • 1 medium, finely grated Yellow onion
  • 2 minced Garlic cloves
  • 2 tbsp, finely chopped Fresh parsley
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Ground paprika
  • 0.5 tsp Ground cinnamon
  • 0.5 tsp (optional) Chili flakes
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp (for cooking or brushing) Olive oil

Directions

Step 1

In a large mixing bowl, combine the ground turkey, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, cinnamon, optional chili flakes, salt, and black pepper.

Step 2

Mix the ingredients thoroughly with your hands or a spoon until well combined. Be careful not to over-mix, as this can make the koftas tough.

Step 3

Divide the mixture into 8 equal portions and shape each portion into an elongated oval or cylindrical shape. If you are using skewers, slide the koftas onto the skewers gently.

Step 4

Place the shaped koftas on a plate or tray and refrigerate for 15-20 minutes to firm them up for easier cooking.

Step 5

If grilling, preheat the grill to medium-high heat and lightly oil the grates. If pan-frying, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 6

Cook the koftas for about 3-4 minutes on each side, or until they are golden brown and fully cooked through (internal temperature should reach 75°C or 165°F).

Step 7

Serve the turkey koftas hot, garnished with extra parsley if desired, alongside flatbreads, a yogurt dipping sauce, or a fresh side salad.
