Ingredients

  • 1 lb ground turkey
  • 3 garlic cloves, minced
  • 0.5 cup red onion, finely chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup plain Greek yogurt
  • 0.25 cup cucumber, grated and drained
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dill, chopped
  • 4 pita breads
  • 4 lettuce leaves
  • 2 tomatoes, sliced
  • 0.5 cup feta cheese, crumbled

Directions

Step 1

In a large mixing bowl, combine the ground turkey, minced garlic, red onion, chopped parsley, ground cumin, ground coriander, dried oregano, salt, and black pepper. Mix until all ingredients are evenly combined.

Step 2

Divide the mixture into four equal portions and shape each portion into a patty, about 1/2 inch thick.

Step 3

Preheat a grill pan or skillet over medium heat and lightly grease with olive oil. Cook the turkey patties for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).

Step 4

While the patties cook, prepare the tzatziki sauce. In a small bowl, mix the plain Greek yogurt, grated and drained cucumber, olive oil, lemon juice, and chopped dill. Stir well until smooth. Set aside.

Step 5

Warm the pita breads in a dry skillet or the oven for a few minutes, just until soft and pliable.

Step 6

To assemble, place a lettuce leaf on each pita bread. Add a cooked turkey patty, a few slices of tomato, a spoonful of tzatziki sauce, and a sprinkle of crumbled feta cheese.

Step 7

Fold the pita bread around the filling or serve open-faced. Serve immediately and enjoy your Turkey Gyro Burgers!
