Ingredients

  • 2 pounds Turkey breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Butter
  • 1 medium (diced) Onion
  • 3 (minced) Garlic cloves
  • 2 tablespoons Flour
  • 1.5 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Thyme
  • 0.5 cup Grated Parmesan cheese
  • 2 tablespoons (chopped) Fresh parsley

Directions

Step 1

Preheat oven to 375°F (190°C).

Step 2

Pat the turkey breast dry with paper towels and season it with salt, black pepper, and paprika on both sides.

Step 3

Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the turkey on each side for 4-5 minutes until golden brown. Remove from the skillet and set aside.

Step 4

Lower the heat to medium. Add butter to the skillet and let it melt. Add the diced onion and cook for 3-4 minutes until softened.

Step 5

Stir in minced garlic and cook for 1 minute until fragrant.

Step 6

Sprinkle flour over the onion and garlic mixture, stirring to create a roux. Cook for 2 minutes to eliminate the raw flour taste.

Step 7

Gradually pour in the chicken broth while whisking to avoid lumps. Bring the mixture to a simmer.

Step 8

Once simmering, stir in the heavy cream, thyme, and grated Parmesan cheese. Continue to cook for 3-4 minutes until the sauce thickens.

Step 9

Return the seared turkey to the skillet, spooning some sauce over the top.

Step 10

Transfer the skillet to the preheated oven and bake uncovered for 15-20 minutes, or until the turkey reaches an internal temperature of 165°F (74°C).

Step 11

Remove the skillet from the oven. Let the turkey rest for 5 minutes. Sprinkle with fresh parsley and serve with your choice of sides.
