Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium carrots, diced
  • 2 pieces celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 3 cups cooked turkey, shredded or diced

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for 5-6 minutes, or until the vegetables are softened.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the shredded or diced turkey, pearl barley, chicken or turkey broth, dried thyme, dried rosemary, bay leaf, salt, and pepper to the pot.

Step 5

Stir well to combine and bring the soup to a boil over high heat.

Step 6

Reduce the heat to low, cover the pot with a lid, and simmer for 40-45 minutes, or until the barley is tender.

Step 7

Remove the bay leaf and discard it. Taste the soup and adjust the seasoning with additional salt and pepper, if needed.

Step 8

Ladle the soup into bowls and garnish with fresh parsley, if desired.

Step 9
