Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 3 medium, diced carrots
  • 3 diced celery stalks
  • 3 cloves, minced garlic
  • 3 cups, shredded or chopped cooked turkey
  • 8 cups chicken or turkey broth
  • 2 cups leftover stuffing
  • 2 bay leaves
  • 1 teaspoon, or 2 sprigs fresh thyme leaves
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 1 cup frozen peas
  • 2 tablespoons, chopped (optional) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onions, carrots, and celery to the pot. Sauté for 5-7 minutes until the vegetables are softened and the onions are translucent.

Step 3

Stir in the minced garlic and cook for 1 minute, or until fragrant.

Step 4

Add the shredded or chopped turkey, chicken or turkey broth, bay leaves, and thyme. Stir to combine.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to meld.

Step 6

Stir in the leftover stuffing, breaking it apart gently with a spoon so it thickens the soup slightly.

Step 7

Season the soup with salt and black pepper to taste.

Step 8

Add the frozen peas and cook for an additional 3-5 minutes until they are heated through.

Step 9

Remove the bay leaves and thyme sprigs (if using fresh thyme) before serving.

Step 10

Ladle the soup into bowls and garnish with chopped parsley if desired. Serve hot and enjoy!
