Ingredients

  • 4 slices sourdough bread
  • 1 cup roasted turkey (sliced)
  • 4 tablespoons cranberry sauce
  • 2 slices Swiss cheese
  • 1 cup baby spinach
  • 2 tablespoons mayonnaise
  • 2 tablespoons butter (softened)

Directions

Step 1

Preheat a panini press or a stovetop grill pan over medium heat.

Step 2

Spread 1 tablespoon of mayonnaise evenly on one side of each slice of sourdough bread.

Step 3

Flip the bread slices over and spread 1 tablespoon of cranberry sauce on the other side of each slice.

Step 4

On two of the bread slices (cranberry-side up), layer the following: 1/2 cup of roasted turkey, 1 slice of Swiss cheese, and 1/2 cup of baby spinach.

Place the remaining bread slices on top of the fillings, cranberry-side down, to assemble the sandwiches.

Spread 1 tablespoon of softened butter evenly on the top of each sandwich.

Place the sandwiches butter-side down in the panini press or grill pan. Spread the remaining butter on the top of the sandwiches while they begin to cook.

Step 8

Close the panini press or press down on the sandwiches with a spatula if using a grill pan. Cook for 3-5 minutes or until the bread is golden brown and crispy, and the cheese is melted.

Step 9

Remove the paninis from the heat and let them rest for 1 minute before slicing in half.
