  • 3 cloves garlic cloves, minced
  • 1 medium green bell pepper, diced
  • 14.5 ounces diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 15 ounces black beans, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1.5 cups brown rice, cooked
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 optional toppings: chopped cilantro, shredded cheese, sour cream, sliced jalapeños

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the ground turkey and cook until browned, breaking it up into small pieces with a wooden spoon, about 5-7 minutes.

Step 3

Remove the cooked turkey from the pot and set aside. In the same pot, add the diced onion, garlic, and green bell pepper. Sauté until the vegetables are softened, about 5 minutes.

Stir in the chili powder, cumin, smoked paprika, oregano, salt, and black pepper, and cook for 1 minute until fragrant.

Step 5

Return the cooked turkey to the pot. Add the diced tomatoes (including their juices), tomato paste, black beans, and chicken broth. Stir well to combine.

Step 6

Bring the mixture to a simmer and reduce the heat to low. Cover and simmer for about 25 minutes, stirring occasionally.

Step 7

Add the cooked brown rice to the pot and stir well. Simmer for an additional 5 minutes to heat the rice through.

Step 8

Taste and adjust seasoning as needed.

Step 9

Ladle the chili into bowls and serve hot with your favorite toppings such as chopped cilantro, shredded cheese, sour cream, or sliced jalapeños if desired.
