Ingredients

  • 1 pound Ground turkey
  • 1.5 cups Brown rice
  • 3 cups Low-sodium chicken broth
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 cup Frozen peas
  • 1 cup Shredded cheddar cheese
  • 1 cup Plain Greek yogurt
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 0.5 cup Parmesan cheese, grated

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the brown rice under cold water and drain.

Step 3

In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes or until the rice is tender and liquid is absorbed. Remove from heat and set aside.

Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 2-3 minutes until softened.
